karjikai is Indian favourite recipe and is a must in my family during diwali season or ganesh chaturthi. perhaps, i must have learnt this recipe from her long back. she even prepares several variations to this recipe. first variation is to add jaggery in place of sugar. in addition, she prepares another variation with just dry fruits stuffing. but i personally liked the simple powdered sugar and coconut stuffed karanji recipe. also, the best part is, it lasts easily for 5-7 days in a air tight container. hence, you can easily enjoy the taste of kajjikayalu for several days without losing its crispiness.
